8/25/10

Today I had a lot of running around to do, and no time to make a lunch/dinner. I ended up with a sandwich from Subway (spicy italian on wheat) and some leftover zucchini lasagna when I got home.

Welcome!

I created this blog because I started the Atkins diet, and my sister wanted to know what I was typically eating in a day so she could get a good idea of how the program works. So I'll be posting all of my meals here, and some photos if I can manage it. I may even post a low carb recipe or two, if it appeals to me. Feel free to look around, and leave some comments!

About Me

Carissa: I'm a single mother to the most beautiful 2 year old in the world - her name is Karma. It's my mission to eat more healthy whole foods, and give them to her as well. I don't want her to grow up on added sugar, HFCS and overprocessed foods. Our overall health is worth the extra time it takes to prepare our food. If I'm not spending time with hmy daughter, I'm usually working. I'm also a full time student, working toward my Bachelor of Science in Nursing.
